Welcome to sapling GullyHomer described olive oil as "liquid gold."

Olives are native to the Mediterranean basin, are now cultivated in many parts of the world and have been traded throughout the world for centuries.

It is probable that many of the early ships arriving on our shores would have carried some olive trees for planting.

Olive farming in Australia dates back to the early 1800s and groves were first planted around 1805 at Parramatta near Sydney.

The olives we grow at Sapling Gully, in Mudgee, are Corrigiola (also spelt Correggiola or Correggiolo), and Frantoio (also know as Parragon, Pendolino or Picual).

The Corrigiola and Frantoio trees in Australia have been DNA confirmed as matching the Correggiola of Tuscany, Italy. The fruit is small in size and ripens late in the season and has a very high oil content and is said to be the benchmark for olive oil in Italy.

Sapling Gully Olive Grove Mudgee

MARCELLA HAZAN, the chef famous for introducing Mediterranean cooking to America said the following about olive oil…

"The taste of a dish for which you need olive oil will be as good or as ordinary as the oil you use. A sublime one can lift even modest ingredients to eminent heights of flavor; a dreary oil will pull the best ingredients down to its own level. Partial clues to the quality of the olive oil you are buying are supplied by the label and the price, but ultimately, the only way to determine which one, among those available, is right for you is to taste and compare."

We believe that cooking with olive oil is like cooking with wine. You should never use a wine or olive oil that does not taste good to you. An inferior oil will leave an aftertaste.

We highly recommend our olive oil to accompany the superb produce from the Mudgee region, especially the cheeses, wines and fruits.

We invite you to try our Organic, Cold Presseed, Sapling Gully Organic Extra Virgin Olive Oil..

Buon appetito

"Sapling Gully Olive Oil" is so named because our grove is located in an area known as "Sapling Gully" where Henry Lawson once lived. Sapling Gully is approximately 6 kms. from Mudgee in New South Wales.

This area became the setting for many of Lawson's poems and stories.

Sapling Gully Olives has around 1200 Olive trees and is certified “organic" by NAASA and so only natural products are used to fertilise the trees and manual labour used to tend and keep weeds to a minimum. The kangaroos on the property provide a good source of organic fertiliser!
